Fit2Go Recipe: Stove Top Beef Stew

WHAT IT IS:

A quick and easy beef stew made on the stove top. Simmered slowly and full of flavor, cooks in under an hour!

WHAT YOU’LL NEED:

  • 2lb cubed beef / beef stew meat
  • 1 shallot diced
  • 6 stalks of celery chopped
  • 1 pack of shiitake mushrooms (optional)
  • 1 pack baby carrots cut in half
  • 1 pack Brussels sprouts
  • 1 small pack baby red potatoes quartered
  • salt and pepper to taste
  • 2 Tbsp smoked paprika
  • 1 tsp regular paprika
  • 3 tbsp minced garlic or 3 gloves minced garlic
  • 2 Tbsp italian seasoning
  • 1 C Cabernet Sauvignons or red cooking wine
  • 3 C Beef stock
  • 1 Tbsp salted butter (I recommend Kerrygold)
  • 1 Tbsp Worcestershire (I recommend Lea & Perrins)
  • Fresh parsley to garnish
  • 8 Qt or larger sauce pan or dutch oven

 

 

INSTRUCTIONS:

 

  1. Heat Stock pot over medium- high heat
  2. Add butter and melt completely
  3. Add beef cubes and stir occasionally until browned at least 3/4
  4. As you are stirring the beef cubes, go ahead and add in the smoked paprika, paprika, salt and pepper
  5. Add in garlic when beef is almost browned
  6. Once beef is browned, add Cabernet and beef stock
  7. Cover, increase head to high and bring to a boil then reduce to low to simmer
  8. Add Italian Seasoning, & Worcestershire sauce
  9. Simmer on Low for 25 minutes
  10. Turn heat back to high and bring to a boil again
  11. Reduce to low and simmer for another 25 minutes until vegetables are tender and cooked thoroughly
  12. Remove from heat, divide into four servings and top with parsley
