20 May Fit2Go Recipe: Oven Roasted Brussels
WHAT IT IS:
Meant to be a side dish. I pair it with steak but it pairs well with red meat, white meat or fish!
WHAT YOU’LL NEED:
- 1/2 red onion sliced into long thin slices as shown in the picture
- 2 T minced Garlic
- 1 bag (16 oz brussels sprouts)
- 2 T Nutritional Yeast
- Salt and Pepper to taste
- 1/4 C water
Recommended:
- Food Scale for accurate measurements
- Rachel Ray Baking SheetsÂ
- Stainless Steel Mixing Bowls
- Cutting Board
- Chef Knives
- I recommend a cast iron skillet in every kitchen! Whatever meat you are making to go with these delicious brussels should surely be cooked in a cast iron skillet!
INSTRUCTIONS:
- Preheat Oven to 425 degrees
- Cut the hard ends off of brussel sprouts then cu the brussels in quarters (cut them in half then in half again)
- Tear as many leaves off of the brussels as possible leaving a very thin core and toss into a large mixing bowl
- Toss in the sliced onions, the salt & pepper, garlic & nutritional yeast and water and mix up
- Place on a baking sheet (preferably lined in foil) and spread as thin as possible
- Bake for about 15-20 minutes until cooked to liking
Some additional ideas / tips:
Drizzle some balsamic vinegar (calories below do not include this)
Turn broiler on at the end for a couple of minutes if you like them crispy! Just keep a close eye on them because the broiler can burn them quickly!
