Fit2Go Recipe: Sherry Shaved Steak Sandwiches & Roasted Broccoli

WHAT IT IS:

Sherry shaved steak sandwiches are very tasty and while maybe higher in calories than you may want, this recipe allows you to pick a different option for the fixings to lower your calories! Super easy and can be cooked either on the stove or in the crock pot! Sherry shaved steak sandwiches eliminate all of the excuses for not being able to cook a healthy dinner!

The roasted broccoli adds a very low calorie but filling side dish to this tasty sandwich!

WHAT YOU’LL NEED:

  • 1lb thin shaved steak
  • 1/2 package shiitake or baby bella mushrooms (your choice) (mushrooms are also optional)
  • 1/2 sliced yellow onion
  • Green pepper cut into long slices (optional as well)
  • Cheese slices of your choice- 1 per sandwich
  • 1/4 C sherry cooking wine
  • Salt & Pepper to taste
  • 1 Tsp minced garlic
  • 1 T water
  • Romaine Lettuce (optional) or
    • Sandwich Bun of your choice (optional)
  • 6 cups broccoli crowns
  • 1/2 cup water
  • 2 T water separated from 1/2 cup water

  • For best flavor- I highly recommend using a cast iron skillet for this and almost everything you cook! But this is optional (https://amzn.to/3bdPD4t)

INSTRUCTIONS:

  1. Preheat oven to 425 degrees.
  2. Chop stems off of broccoli crowns to have separated chunks of broccoli crowns
  3. I prefer to line my baking sheets with foil to extend their life and prevent damage- do this step now if you choose
  4. Heat a skillet over medium-high heat
  5. Saute mushrooms and onions in about 2 T water  – stirring occasionally until cooked
  6. While mushrooms & onions are cooking – place broccoli onto baking sheet
  7. Sprinkle broccoli with 1/2 cup of water
  8. Toss broccoli in salt and pepper to taste and nutritional yeast
  9. Place broccoli in oven and cook about 15-18 minutes until cooked to liking- should be bright green and tender. (Broccoli should be cooking in oven while you are cooking the steak in the skillet)
  10. Once mushrooms are cooked (about 5-8 minutes) add shaved steak to skillet
  11. Add sherry cooking wine
  12. Cook mixture of steak, mushrooms and onions over medium-high heat stirring frequently until steak is cooked through (no pink) and the liquid has evaporated
  13. Serve & enjoy!
