Fit2Go Recipe: Oven Baked Smoky Italian Pork Loin & Garlic Parm Asparagus

WHAT IT IS:

Oven Baked Smoky Italian Pork & Garlic Parm Asparagus is a simple and easy to make dinner with a lot of flavor thanks to creative combination of seasonings used!

WHAT YOU’LL NEED:

  • 2lb pork tenderloin
  • 1 tbsp olive or coconut oil
  • 3 gloves or 2 T garlic minced 
  • 1 T chopped or dried rosemary 
  • 1 T Basil
  • 1 T oregano
  • 1 Tyme
  • 1 T smoked paprika 
  • 1 T Sage (optional)
  • Salt & Pepper to taste
    • Can substitute 4 T Italian seasoning instead if you’d like 
  • 1lb asparagus 
  • 2 T minced garlic or 2 cloves minced garlic
  • Salt and pepper to taste

  • 2 T parmesan 
  • 2 T water
  • Lemon juice or freshly squeezed lemon to taste
  • Meat thermometer (https://amzn.to/2yvoPiG
  • Food Scale (optional) to measure 8oz portion of pork for a serving  (https://amzn.to/2SBGnRa)

 

INSTRUCTIONS:

  1. Preheat oven to 350 degrees
  2. Mix all seasonings together in bowl 
  3. Baste pork loin in olive oil
  4. Rub seasoning mixture into pork loin 
  5. Wrap pork loin in foil and place on baking sheet pan 
  6. Bake approximately 20 min per lb (145 degrees F in center
  7. Remove foil wrapped pork loin from baking sheet and sit on cutting board still tightly wrapped in foil
  8. Turn the temperature of the oven up to 425 degrees- Keep the pork wrapped in foil until the oven has reached 425 degrees.

While the oven is heating up to 425 degrees (should only take about 5-10 minutes max)

  1. Wash asparagus and trim ends off
  2. Line baking sheet with foil
  3. Place asparagus on foil
  4. Toss asparagus in 2 T water to coat
  5. Add salt and pepper, nutritional yeast and garlic
  6. Toss to coat
  7. Sprinkle with lemon juice to taste
  8. Place in oven for about 15 minutes or cooked to liking- Should be bright green and tender when pierced with a fork
  9. After placing the asparagus in the oven remove the pork from foil and let rest until asparagus is finished cooking
  10. Remove asparagus from oven and serve
  11. Slice pork tenderloin into about 1/2″ slices and serve with asparagus
